Ingredients
  1. 1 1/4 cups all-purpose flour
  2. 1 cup slivered almonds, toasted
  3. 1/4 cup sugar
  4. 1/2 teaspoon salt
  5. 3/4 cup unsalted butter
  6. 2 to 3 tablespoons ice water
  7. Almond Custard (recipe follows)
  8. Sweetened whipped cream, fresh raspberries, fresh mint leaves
Instructions
  1. In the work bowl of a food processor, place flour, almonds, sugar, and salt. Pulse until almonds are finely ground. Add butter, and pulse until mixture is crumbly. With processor running, add water in a slow, steady stream until a ball begins to form.
  2. Spray 12 (3-inch) brioche molds with baking spray with flour. Divide almond mixture among prepared pans, pressing gently into bottom and up sides. Place pans on a large jelly-roll pan. Refrigerate for 20 minutes.
  3. Preheat oven to 400°. Bake until golden brown, about 20 minutes. Let cool in pans for 10 minutes. Remove from pans, and let cool completely on wire racks.
  4. Just before serving, divide Almond Custard among tart shells. Top with whipped cream, raspberries, and mint.

  1. 2 cups half-and-half
  2. 3/4 cup sugar
  3. 1/3 cup all-purpose flour
  4. 4 large eggs
  5. 2 tablespoons unsalted butter
  6. 1/2 teaspoon almond extract
Instructions
  1. In a medium saucepan, whisk together half-and-half, sugar, flour, and eggs until smooth. Cook over medium heat, stirring constantly, until thickened, about 10 minutes. Remove from heat; stir in butter and almond extract. Transfer to a medium bowl. Place a sheet of plastic wrap directly on surface of custard. Refrigerate for 30 minutes.
