Baked Apples, Pears, and Cranberries

Ingredients
  1. 3 Fuji apples, cored and chopped
  2. 3 Granny Smith apples, cored and chopped
  3. 3 pears, cored and chopped
  4. 1 (12-ounce) package fresh cranberries
  5. 1/2 cup sugar
  6. 1/2 cup all-purpose flour
  7. 1 teaspoon ground cinnamon
  8. Streusel Topping (recipe follows)
  9. 1/2 cup coconut flakes
Instructions
  1. Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray.
  2. In a large bowl, stir together apples, pears, cranberries, sugar, flour, and cinnamon. Spoon into prepared pan. Sprinkle with Streusel Topping.
  3. Bake until hot and bubbly, about 30 minutes. Sprinkle with coconut, and bake until coconut is toasted, about 15 minutes more.
Notes
  1. NOTE: Casserole may be assembled up to 1 day ahead. Cover tightly and refrigerate until ready to bake.

  1. 1 cup firmly packed brown sugar
  2. 1/3 cup all-purpose flour
  3. 1/3 cup quick-cooking oats
  4. 1/4 cup butter
Instructions
  1. In a medium bowl, stir together brown sugar, flour, and oats. Using a pastry blender, cut in butter until mixture is crumbly.
