Ingredients
  1. 3 cups all-purpose flour
  2. 2 2/3 cups sugar
  3. 1 cup unsweetened cocoa powder
  4. 2 teaspoons baking soda
  5. 1 1/2 teaspoons baking powder
  6. 1/2 teaspoon salt
  7. 1 1/3 cups whole milk
  8. 1 1/3 cups butter, melted
  9. 4 large eggs
  10. 1 1/2 cups sour cream
  11. 2 teaspoons vanilla extract
  12. Chocolate Fudge Frosting (recipe follows)
  13. Garnish: chocolate curls, white chocolate curls, fresh raspberries
Instructions
  1. Preheat oven to 350°. Spray 3 (9-inch) cake pans with nonstick baking spray
  2. with flour.
  3. In a large bowl, combine flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add milk, melted butter, and eggs; beat with an electric mixer at medium speed for 2 minutes, or until well combined. Beat in sour cream and vanilla. Spoon batter into prepared cake pans.
  4. Bake for 25 minutes, or until a wooden pick inserted in the centers comes out clean. Let cool in pans on wire racks for 10 minutes. Remove from pans, and let cool completely on wire racks. Spread Chocolate Fudge Frosting in between layers and on top and sides of cake. Garnish with chocolate curls, white chocolate curls, and fresh raspberries, if desired.

Makes approximately 6 cups

Ingredients
  1. 1 cup sugar
  2. 1 cup firmly packed dark brown sugar
  3. 2 cups heavy whipping cream
  4. 8 (1-ounce) squares semisweet chocolate, chopped
  5. 1 1/4 cups cold butter, cut into pieces
  6. 2 cups confectioners’ sugar, sifted
Instructions
  1. 1. In a medium saucepan, combine sugar, brown sugar, and cream. Bring to a boil over medium-high heat; reduce heat to medium-low, and simmer for 6 minutes, stirring frequently. Remove from heat; add chocolate and butter, stirring until melted and smooth. Let cool for 10 minutes. Gradually whisk in confectioners’ sugar. Refrigerate for 1 to 11/2 hours, whisking periodically, until chocolate mixture reaches a spreadable consistency.
