Arugula Salad with Avocado Basil Dressing
Makes 6 servings
4 cups washed and torn green leaf lettuce
4 cups arugula
2 cups shredded radicchio
1 cup sliced radishes
2 carrots, grated
1 recipe Avocado Basil Dressing (recipe follows)
1. In a large bowl, combine lettuce, arugula, radicchio, radishes, and carrots. Divide evenly among six salad plates. Drizzle with Avocado Basil Dressing just before serving.
Avocado Basil Dressing
Makes about 4 cups
3 medium, ripe avocados, peeled and seeded
1 small shallot, chopped
2 1/2 cups whole buttermilk
1/4 cup sour cream
3 tablespoons chopped fresh basil
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 tablespoons sugar
2 1/2 teaspoons minced garlic
1 1/2 teaspoons salt
1/2 teaspoon garlic salt
1/2 teaspoon ground black pepper
1. In the work bowl of a food processor, combine all ingredients; process until smooth. Cover and chill. Store dressing in an airtight container for up to 1 week.
