Flounder with Passion Fruit Sauce
Makes 8 servings
1 cup all-purpose flour
8 (6-ounce) fresh flounder fillets
1 teaspoon coarse kosher salt
1/2 teaspoon freshly ground black pepper
Peanut oil for frying
1 recipe Passion Fruit Sauce
Garnish: fresh dill
1. Place flour in a shallow dish. Coat flounder fillets with flour, shaking off excess. Sprinkle fillets with salt and pepper.
2. In a large skillet, pour oil to a depth of 1/4 inch; heat over medium-high heat. Cook fish, in batches, for 6 to 8 minutes per side, or until lightly browned. Drain on paper towels; serve immediately with Passion Fruit Sauce. Garnish with fresh dill, if desired.
Passion Fruit Sauce
Makes about 3 cups
1/4 cup butter
2 tablespoons minced shallot
1/4 cup all-purpose flour
2 cups seafood stock
2 cups passion fruit juice
1 1/2 teaspoons coarse kosher salt
1. In a large saucepan, melt butter over medium-high heat. Add shallot; cook for 5 minutes or until tender, stirring frequently. Add flour; cook for 2 minutes, whisking constantly. Add stock, fruit juice, and salt, whisking to combine. Cook for about 10 to 12 minutes or until sauce is reduced by two-thirds and slightly thickened.
