Frozen Watermelon Daiquiri

Makes 2 drinks

2 cups seeded and diced watermelon, frozen
4 ounces watermelon-flavored rum
3 ounces Simple Syrup (recipe follows)
1 1/2 ounces fresh lime juice
Garnish: watermelon wedges

1. Combine all ingredients in the container of a blender; process until smooth. Garnish with watermelon wedges, if desired.

Simple Syrup

Makes 1 1/2 cups

1 cup sugar
1 cup water


1. In a small saucepan, combine sugar and water over medium-high heat, stirring constantly. Bring mixture to a boil; reduce heat to low, and simmer for 3 to 4 minutes, stirring constantly. Remove from heat, and cool completely. Pour into an airtight container. Store syrup in refrigerator for up to 3 weeks.
