Grilled Salmon with Basil-Lime Butter Sauce
Makes 4 servings
4 (6-ounce) salmon fillets
2 tablespoons butter, melted
1/4 teaspoon salt
1/4 teaspoon ground black pepper
Basil-Lime Butter Sauce (recipe follows)
1. Brush salmon fillets with melted butter. Sprinkle evenly with salt and pepper. Grill, covered, over medium-high heat (350º to 400º) for 5 to 7 minutes per side, or until desired degree of doneness. Serve with Basil-Lime Butter Sauce.
Basil-Lime Butter Sauce
Makes about 3/4 cup
1 teaspoon lime zest
2 tablespoons fresh lime juice
1 tablespoon white balsamic vinegar
1 1/2 teaspoons minced garlic
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup butter, melted
1/4 cup chopped fresh basil
1. In the container of a blender, combine lime zest, lime juice, vinegar, garlic, salt, and pepper. With blender running, add melted butter in a slow, steady stream until blended. Add basil, and process just until combined.
