Makes 62 to 70 cookies
1 cup butter, softened
1 cup sugar
1 cup brown sugar, packed
2 teaspoons vanilla extract
2 1/2 cups quick-cooking oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 (6-ounce) package peanut butter chips
1 (6-ounce) package white chocolate chips
1 (6-ounce) package chocolate chips
1 1/2 cups chopped walnuts
1. Preheat oven to 375°.
2. Cream together butter, sugar, and brown sugar. Add eggs and vanilla.
3. Using a blender or food processor, process oats until they turn to powder. In a separate bowl, mix oats, flour, baking powder, and baking soda. Add peanut butter chips, white chocolate chips, chocolate chips, and walnuts to the oats mixture. Stir oats mixture into sugar mixture.
4. Drop by tablespoonfuls 2 inches apart onto an ungreased baking sheet. Bake for about 7 minutes.
