Savory Black Beans

Ingredients
- 2 tablespoons bacon drippings
- 1 medium yellow onion, chopped
- 1 teaspoon minced garlic
- 3 (15-ounce) cans black beans, drained
- 1 (14-ounce) can chicken broth
- 1 (4.5-ounce) can chopped green chiles
- 2 bay leaves
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- In a large Dutch oven, heat bacon drippings over medium heat.
- Add onion, and cook 2 to 3 minutes, or until lightly browned. Add garlic, and cook 1 minute. Add black beans, chicken broth, chiles, bay leaves, cumin, salt, and pepper.
- Bring to a simmer over medium heat. Reduce heat to low; simmer uncovered 1 hour, stirring occasionally. Remove and discard bay leaves.
