Caprese Vegetable Salad
Makes approximately 8 servings
Ingredients
- ½ cup thinly sliced red onion
- ½ cup hot apple cider vinegar
- 2 heirloom tomatoes, halved, sliced
- 1 green tomato, halved, sliced
- 1 yellow tomato, halved, sliced
- 1 bunch broccolini, blanched
- 2 ears corn, kernels cut from cob
- 1 cup sliced cucumbers
- 1 cup mozzarella pearls
- 1 tablespoon chopped mint
- 1 tablespoon chopped basil
- 5 tablespoons apple cider vinegar
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, grated
- 1½ teaspoons kosher salt
- 1 teaspoon sugar
- ½ teaspoon ground black pepper
Instructions
- In a small bowl, combine red onion and hot vinegar. Let sit for 15 minutes. Drain vinegar from onions; discard vinegar.
- On a platter, arrange red onion, tomatoes, broccolini, corn, cucumbers, mozzarella, mint, and basil.
- In a small bowl, whisk together cider vinegar and remaining ingredients. Drizzle vinaigrette over vegetables. Serve immediately.
