Chocolate-Cola Cake

Chocolate-Cola CakePair a piece of this old-fashioned favorite with a scoop of classic vanilla ice cream. 

Chocolate-Cola Cake
 
Makes about 12 servings
Ingredients
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 cup unsalted butter
  • 1 cup cola
  • ½ cup whole buttermilk
  • ¼ cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Cola Frosting (recipe follows)
Instructions
  1. Preheat oven to 350˚. Spray a 13x9-inch baking dish with baking spray with flour.
  2. In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt.
  3. In a medium saucepan, bring butter, cola, buttermilk, and cocoa to a boil over medium-high heat, whisking constantly. Remove from heat, and add to flour mixture, whisking until smooth. Add eggs and vanilla, whisking until smooth. Spoon batter into prepared pan.
  4. Bake until a wooden pick inserted in center comes out clean, 30 to 35 minutes. Pour Cola Frosting over hot cake. Let cool for 30 minutes before serving.

Cola Frosting
 
Makes about 2 cups
Ingredients
  • ½ cup unsalted butter
  • ½ cup cola
  • ¼ cup unsweetened cocoa powder
  • 4 cups confectioners’ sugar
  • 1 cup chopped pecans
Instructions
  1. In a medium saucepan, bring butter, cola, and cocoa to a boil over medium heat, whisking constantly. Remove from heat, and gradually add confectioners’ sugar, whisking until smooth. Stir in pecans.
