Makes about 4 servings
- 3 cups vanilla ice cream
- 1 cup coconut milk
- 1 cup frozen sliced mango
- 2 tablespoons sugar
- Garnish: skewered fresh mango rolled in coconut, fresh basil
- In the container of a blender, combine ice cream, coconut milk, mango, and sugar. Blend until smooth. Serve immediately. Garnish with skewered mango and basil, if desired.
