These Cowboy Cornmeal Rolls are the perfect complement to a home cooked meal.

Cowboy Cornmeal Rolls

Ingredients
  • ¼ cup butter, softened
  • 2 cups all-purpose flour
  • ⅔ cup yellow cornmeal
  • 2 tablespoons sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup cold butter, cut into pieces
  • 1 cup milk
  • ½ cup sour cream
Instructions
  1. Preheat oven to 350º. Generously grease each cup of a 12-cup muffin pan with softened butter; set aside.
  2. In a medium bowl, combine flour, cornmeal, sugar, baking powder, salt, and baking soda. Using a pastry blender or fork, cut cold butter into flour mixture until crumbly. Add milk and sour cream; stir to mix well. Spoon batter into each muffin cup, filling three-fourths full. Bake for 30 minutes, or until rolls are golden brown.
