My Dad’s Delicious Buttermilk Pancakes

My dad flew jets for the Navy, and then became an engineer. He made my sisters, brother, and me pancakes on Saturday mornings. It was the highlight of my week. I had Scott Fox, the father in The Man She Married, make his daughter, Natalie, buttermilk pancakes when she was a kid too.
Ingredients
  • 3 cups buttermilk
  • 2 and a half cups flour
  • 2 eggs, beaten
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • ¾ teaspoon baking soda
  • 1 tablespoon hot water
  • 2 tablespoons corn syrup
Instructions
  1. Mix the buttermilk and flour. Cover and let stand in the fridge for 12 hours. The next day add the beaten eggs, baking powder, and salt. Dissolve the baking soda in the hot water, and add. Add the corn syrup.
  2. Mix. Heat that griddle up and enjoy.
