Caprese Vegetable Salad
 
Makes approximately 8 servings
Ingredients
  • ½ cup thinly sliced red onion
  • ½ cup hot apple cider vinegar
  • 2 heirloom tomatoes, halved, sliced
  • 1 green tomato, halved, sliced
  • 1 yellow tomato, halved, sliced
  • 1 bunch broccolini, blanched
  • 2 ears corn, kernels cut from cob
  • 1 cup sliced cucumbers
  • 1 cup mozzarella pearls
  • 1 tablespoon chopped mint
  • 1 tablespoon chopped basil
  • 5 tablespoons apple cider vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 clove garlic, grated
  • 1½ teaspoons kosher salt
  • 1 teaspoon sugar
  • ½ teaspoon ground black pepper
Instructions
  1. In a small bowl, combine red onion and hot vinegar. Let sit for 15 minutes. Drain vinegar from onions; discard vinegar.
  2. On a platter, arrange red onion, tomatoes, broccolini, corn, cucumbers, mozzarella, mint, and basil.
  3. In a small bowl, whisk together cider vinegar and remaining ingredients. Drizzle vinaigrette over vegetables. Serve immediately.
