1½ cups shelled lady peas (about 2 pounds unshelled)
½ pound haricots verts, halved crosswise
1 tablespoon vegetable oil
¼ teaspoon kosher salt
¼ teaspoon ground black pepper
Buttermilk-Herb Dressing (recipe follows)
Garnish: fresh dill, fresh basil, fresh chives
Instructions
In a large saucepan, bring 4 cups water to a boil over medium-high heat; add peas and beans. When water returns to a bowl, immediately remove vegetables using a slotted spoon, and transfer to an ice water bath to stop the cooking process. Drain, and pat dry. Place peas and beans in a medium bowl. Add oil, salt, and pepper; toss. Serve with Buttermilk-Herb Dressing. Garnish with dill, basil, and chives, if desired.
