1 medium Fuji or Gala apple, cored and sliced ¼-inch thick
6 cups collard greens, rinsed and chopped
1 teaspoon kosher salt
½ teaspoon ground black pepper
Instructions
In a large skillet, cook bacon over medium heat until crisp, about 6 minutes. Remove bacon from pan, and set aside, reserving drippings in pan. Add onion to pan; cook, stirring until browned, about 6 minutes.
Add potatoes and apple; cook, stirring until potatoes are browned and apple is slightly softened, about 15 minutes. Stir in greens, bacon, salt, and pepper.
Cover, and cook until greens are tender, about 5 minutes.
