Golden Anniversary Cake
 
MAKE 1 (9-INCH) CAKE
Ingredients
  • 1½ cups unsalted butter, softened
  • 2½ cups sugar
  • 1½ cups whole milk
  • 2 teaspoons vanilla extract
  • 3½ cups unsifted cake flour
  • 1 tablespoon baking powder
  • ½ teaspoon kosher salt
  • 7 large egg whites
  • Vanilla Buttercream Frosting (recipe follows)
  • Gold cake decorating sprinkles*
Instructions
  1. Preheat oven to 350°. Spray 3 (9-inch) round cake pans with baking spray with flour.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat butter and sugar at medium speed until fluffy, about 2 to 3 minutes.
  3. In a large bowl, stir together milk and vanilla. In another bowl, whisk together flour, baking powder, and salt. With mixer on low speed, add flour mixture to butter mixture, alternately with milk mixture, beginning and ending with flour mixture. Beat just until blended after each addition.
  4. In a large bowl, beat egg whites with a mixer at medium speed until stiff peaks form; gently fold into batter. Pour batter into prepared pans.
  5. Bake until a wooden pick inserted in center comes out clean, 24 to 27 minutes. Let cool in pans on wire racks for 10 minutes. Remove from pans; let cool completely on wire racks.
  6. Spread Vanilla Buttercream Frosting between layers (about 1 cup per layer) and on top and sides of cake. Decorate as desired with sprinkles.
