Coconut-Ginger Rice
 
Makes 6 to 8 servings
Ingredients
  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • 1 tablespoon finely chopped fresh ginger
  • 3 cloves garlic, minced
  • 2½ cups jasmine rice
  • 2 (13.5-ounce) cans unsweetened coconut milk
  • 1½ cups water
  • ¼ cup chopped fresh cilantro
  • 1½ teaspoons salt
  • 1 teaspoon lime zest
  • Garnish: fresh cilantro
Instructions
  1. In a large saucepan, heat oil over medium-high heat. Add onion, ginger, and garlic; cook for 4 minutes. Add rice; cook for 1 minute, stirring constantly. Stir in coconut milk, 1½ cups water, cilantro, salt, and zest; bring to a boil. Cover, reduce heat, and simmer until rice is tender and liquid is absorbed, 15 to 20 minutes.
  2. Remove from heat, and let stand for 5 minutes. Fluff rice with a fork. Garnish with cilantro, if desired.
