Green Jacket Salad

  1. 1 (6-ounce) package baby spinach,
  2. stems removed
  3. 1 small head green leaf lettuce, chopped
  4. 2 (14-ounce) cans hearts of palm,
  5. drained and sliced
  6. 1 (12-ounce) container gourmet medley
  7. tomatoes, halved
  8. 12 pieces hickory-smoked bacon,
  9. cooked and crumbled
  10. 1 (4-ounce) container goat cheese
  11. crumbles
  12. White Wine Vinaigrette (recipe follows)
  1. On each of 6 dinner plates, evenly divide spinach and lettuce. Top with hearts of palm, tomatoes, bacon, and goat cheese crumbles. Drizzle with White Wine Vinaigrette just before serving.

  2. 1 cup white-wine vinegar
  3. 1 tablespoon Dijon mustard
  4. 2 teaspoons sugar
  5. ½ teaspoon salt
  6. ½ teaspoon garlic powder
  7. ½ teaspoon ground black pepper
  8. ¾ cup extra-light olive oil
  1. In a small bowl, combine vinegar, Dijon mustard, sugar, salt, garlic powder, and pepper, whisking until sugar dissolves. In a slow, steady stream, gradually add olive oil, whisking to combine well.
