Lady Pea and French Green Bean Salad 

This Lady Pea and French Green Bean Salad shines with the addition of zesty Buttermilk-Herb Dressing.

Lady Pea and French Green Bean Salad 
 
Makes 4 cups
Ingredients
  • 4 cups water
  • 1½ cups shelled lady peas (about 2 pounds unshelled)
  • ½ pound haricots verts, halved crosswise
  • 1 tablespoon vegetable oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • Buttermilk-Herb Dressing (recipe follows)
  • Garnish: fresh dill, fresh basil, fresh chives
Instructions
  1. In a large saucepan, bring 4 cups water to a boil over medium-high heat; add peas and beans. When water returns to a bowl, immediately remove vegetables using a slotted spoon, and transfer to an ice water bath to stop the cooking process. Drain, and pat dry. Place peas and beans in a medium bowl. Add oil, salt, and pepper; toss. Serve with Buttermilk-Herb Dressing. Garnish with dill, basil, and chives, if desired.
 
Buttermilk-Herb Dressing
 
Ingredients
  • ½ cup mayonnaise
  • ½ cup whole buttermilk
  • ¼ cup chopped fresh basil
  • 2 tablespoons chopped fresh dill
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons distilled white vinegar
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon sugar
Instructions
  1. In a medium bowl, whisk together all ingredients. Serve immediately, or cover and refrigerate for up to 4 hours.
