This Lady Pea and French Green Bean Salad shines with the addition of zesty Buttermilk-Herb Dressing.
Lady Pea and French Green Bean Salad
Makes 4 cups
Ingredients
- 4 cups water
- 1½ cups shelled lady peas (about 2 pounds unshelled)
- ½ pound haricots verts, halved crosswise
- 1 tablespoon vegetable oil
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- Buttermilk-Herb Dressing (recipe follows)
- Garnish: fresh dill, fresh basil, fresh chives
Instructions
- In a large saucepan, bring 4 cups water to a boil over medium-high heat; add peas and beans. When water returns to a bowl, immediately remove vegetables using a slotted spoon, and transfer to an ice water bath to stop the cooking process. Drain, and pat dry. Place peas and beans in a medium bowl. Add oil, salt, and pepper; toss. Serve with Buttermilk-Herb Dressing. Garnish with dill, basil, and chives, if desired.
Buttermilk-Herb Dressing
Ingredients
- ½ cup mayonnaise
- ½ cup whole buttermilk
- ¼ cup chopped fresh basil
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh chives
- 2 tablespoons distilled white vinegar
- ¼ teaspoon kosher salt
- ¼ teaspoon ground black pepper
- ¼ teaspoon sugar
Instructions
- In a medium bowl, whisk together all ingredients. Serve immediately, or cover and refrigerate for up to 4 hours.
