Mini Potato Skins with Horseradish Dipping Sauce

Ingredients
  1. 12 small red potatoes, washed and dried
  2. 3 tablespoons olive oil, divided
  3. 1 teaspoon Creole seasoning
  4. 1/2 teaspoon salt
  5. 1/4 teaspoon ground black pepper
  6. 11/2 cups shredded Cheddar and
  7. Monterey Jack cheese blend
  8. 8 slices bacon, cooked and crumbled
  9. 1/4 cup chopped green onion
  10. Horseradish Dipping Sauce (recipe follows)
Instructions
  1. Preheat oven to 375°. Line a baking sheet with aluminum foil.
  2. Rub potatoes with 1 tablespoon olive oil to coat skins. Place on prepared baking sheet. Bake for 45 minutes or until done.
  3. Let potatoes cool until easy to handle. Cut potatoes in half; using a teaspoon or melon baller, scoop out pulp, leaving 1/4-inch-thick shells. Discard potato pulp, or reserve for another use.
  4. In a small bowl, combine 2 tablespoons olive oil, Creole seasoning, salt, and pepper. Brush inside of potatoes with olive oil mixture. Bake for 15 minutes. Top with cheese, bacon, and green onion; bake for 5 minutes or until cheese is melted. Serve with Horseradish Dipping Sauce.

  1. 1 cup sour cream
  2. 1/2 cup mayonnaise
  3. 2 tablespoons prepared horseradish
  4. 1 tablespoon chopped fresh chives
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon ground black pepper
Instructions
  1. Combine all ingredients in a small bowl. Cover, and chill until ready to serve.
