Parmesan Crisp Hot Brown Bites

All the delicious flavors of the classic Kentucky Hot Brown come together in these Parmesan crisp bites for the perfect party snack.

Ingredients
  • 1 (8-ounce) wedge Parmesan cheese, shredded
  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 1 cup whole milk
  • 1 cup heavy whipping cream
  • ½ cup shredded smoked Gruyère cheese
  • ⅛ teaspoon paprika, divided
  • 1 pinch ground red pepper
  • 12 ounces roasted turkey, thinly sliced
  • ¼ cup cooked, crumbled bacon
  • Garnish: quartered cherry tomatoes, chopped fresh parsley
Instructions
  1. Preheat oven to 350°. Line a baking sheet with parchment paper.
  2. On prepared pan, spoon 24 (1-tablespoon) mounds shredded Parmesan 2 inches apart. Bake until melted and bubbly, 6 to 8 minutes. Let cool for 1 minute. While Parmesan is still hot, remove from pan using a spatula, and press 1 round into each cup of a 24-well mini muffin pan. Let cool completely.
  3. In a medium saucepan, melt butter over medium-high heat. Add flour and whisk until combined. Slowly add milk and cream, whisking continuously, until combined. Reduce heat to medium and cook until thickened. Whisk in Gruyère, paprika, and red pepper until melted and combined.
  4. Fill each Parmesan cup evenly with turkey, cheese sauce, and bacon. Garnish with tomatoes and parsley, if desired.
Notes
Kitchen Tip: Extra cheese sauce can be used for macaroni and cheese. Store extra sauce in refrigerator for up to 3 days.
