
Peanut Butter Banana Bread

Ingredients
- Yield: 1 (10-inch) loaf.
- 1⁄2 cup butter, softened
- 1⁄2 cup creamy peanut butter
- 1 cup sugar
- 3 large eggs
- 2 cups mashed ripe bananas (about 4 large)
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon ground cinnamon
- 1⁄2 teaspoon salt
- 1⁄2 cup sour cream
- Chocolate Butter (recipe follows)
Instructions
- Preheat oven to 350°. Spray a 10-inch loaf pan with baking spray with flour.
- In a large bowl, beat butter, peanut butter, and sugar at medium speed with a mixer until fluffy. Add eggs, one at a time, beating well after each addition. Add mashed banana, beating until combined.
- In a medium bowl, combine flour, baking powder, baking soda, cinnamon, and salt. Gradually add flour mixture to butter mixture, beating until well combined.
- Stir in sour cream.
- Spoon batter into prepared pan, and bake until a wooden pick inserted in center comes out clean, 1 hour. (Loosely cover with aluminum foil during the last 15 to 20 minutes of baking time to prevent excess browning.) Let cool in pan for 10 minutes. Remove to a wire rack, and let cool completely. Serve with Chocolate Butter.

Chocolate Butter

Ingredients
- Yield: About 1 cup
- 1⁄2 cup butter, softened
- 1⁄2 cup semisweet chocolate chips, melted and cooled
Instructions
- In a small bowl, combine butter and melted chocolate, stirring well to combine. Store in refrigerator. Let come to room temperature before serving.
