Pear Galette with Brown Sugar Cream

Makes 6 to 8 servings
Ingredients
- 2 red pears, thinly sliced
- ¼ cup plus 1 tablespoon granulated
- sugar, divided
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1 teaspoon apple pie spice
- 1 (14.1-ounce) package refrigerated pie crust
- 1/3 cup finely chopped walnuts
- 1 tablespoon milk
- Brown Sugar Cream (recipe follows)
Instructions
- Preheat oven to 400°. In a large bowl, combine pears, ¼ cup sugar, zest, juice, and apple pie spice. Toss gently to coat.
- Line a baking sheet with parchment paper. On a lightly floured surface, unroll 1 pie crust. Sprinkle with walnuts, and place the other pie crust on top, rolling to seal. Transfer to prepared baking sheet.
- Spoon pear mixture over pie crust, leaving a 4-inch border. (You will need to pile the fruit high.) Fold edges of dough inward, pressing gently to seal. Brush dough with milk, and sprinkle with remaining 1 tablespoon sugar.
- Bake until golden, 20 to 25 minutes, shielding with aluminum foil if necessary to prevent excess browning. Serve warm with Brown Sugar Cream.

Brown Sugar Cream

Makes ½ cup
Ingredients
- 1/3 cup sour cream
- 2 tablespoons light brown sugar
Instructions
- In a small bowl, stir sour cream and sugar together until sugar is dissolved. Chill until ready to serve.
