Ingredients
  1. 2 red pears, thinly sliced
  2. ¼ cup plus 1 tablespoon granulated
  3. sugar, divided
  4. 1 teaspoon lemon zest
  5. 1 tablespoon fresh lemon juice
  6. 1 teaspoon apple pie spice
  7. 1 (14.1-ounce) package refrigerated pie crust
  8. 1/3 cup finely chopped walnuts
  9. 1 tablespoon milk
  10. Brown Sugar Cream (recipe follows)
Instructions
  1. Preheat oven to 400°. In a large bowl, combine pears, ¼ cup sugar, zest, juice, and apple pie spice. Toss gently to coat.
  2. Line a baking sheet with parchment paper. On a lightly floured surface, unroll 1 pie crust. Sprinkle with walnuts, and place the other pie crust on top, rolling to seal. Transfer to prepared baking sheet.
  3. Spoon pear mixture over pie crust, leaving a 4-inch border. (You will need to pile the fruit high.) Fold edges of dough inward, pressing gently to seal. Brush dough with milk, and sprinkle with remaining 1 tablespoon sugar.
  4. Bake until golden, 20 to 25 minutes, shielding with aluminum foil if necessary to prevent excess browning. Serve warm with Brown Sugar Cream.

  2. 2 tablespoons light brown sugar
Instructions
  1. In a small bowl, stir sour cream and sugar together until sugar is dissolved. Chill until ready to serve.
