Spiced Molasses Cookies

Ingredients
- ¾ cup unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup firmly packed dark brown sugar
- 1 large egg
- ¼ cup unsulphured molasses
- 2¼ cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon kosher salt
- ¼ teaspoon ground nutmeg
- Turbinado sugar
Instructions
- Preheat oven to 350°. Line 2 baking sheets with parchment paper.
- In the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugars at medium speed until fluffy, about 4 minutes. Add egg, beating well. Add molasses, beating until no streaks remain.
- In another large bowl, whisk together flour, baking soda, ginger, cinnamon, salt, and nutmeg. Gradually add flour mixture to butter mixture, beating just until combined. Using a 1½-tablespoon spring-loaded scoop, scoop dough onto prepared baking sheets 3 inches apart. Sprinkle turbinado sugar on top.
- Bake until cookies are flat and edges are set, 10 to 12 minutes. Let cool on pans for 10 minutes. Remove from pans, and let cool completely on wire racks. Store in airtight containers for up to 4 days.
