Raw Zucchini and Yellow Squash Salad with Chamomile Dressing

Ingredients
  1. 1 cup hot water
  2. ¼ cup dried chamomile
  3. 2 tablespoons olive oil
  4. 1 tablespoon lime juice (from ½ lime)
  5. 1 teaspoon honey
  6. ½ teaspoon white vinegar
  7. ¼ teaspoon coarse salt
  8. 3 cups chopped squash
  9. 2 cups chopped zucchini (about 1 large)
  10. ¼ cup thinly sliced spring onions (¼ pound)
Instructions
  1. Bring the water to a boil, add to the chamomile, and let steep and cool for one hour. Strain through a fine-mesh strainer. Reserve 2 tablespoons for the dressing.
  2. Combine the 2 tablespoons chamomile liquid with oil, lime juice, honey, vinegar, and salt. Whisk together.
  3. In a large bowl, toss the squash, zucchini, and onions with the dressing. Serve immediately.
