White Chocolate-Dipped Candied Grapefruit

Dipped in white chocolate and sprinkled with sea salt, these candied grapefruit slices are tasty goodies to share with friends and family.

MAKES 10 TO 12
Ingredients
  • 1 medium grapefruit, cut crosswise into ⅛-inch-thick slices
  • 2 cups granulated sugar
  • 1 cup water
  • ½ cup superfine sugar
  • 1 cup white chocolate melting wafers*
  • Garnish: sea salt flakes
Instructions
  1. In a medium saucepan, combine grapefruit slices and cold water to cover by 1 inch. Bring to a boil over medium-high heat. Drain grapefruit and repeat process twice.
  2. In a large skillet, bring granulated sugar and 1 cup water to a boil over medium heat, stirring until sugar is dissolved. Add grapefruit slices in a single layer; simmer, turning once, until white pith is somewhat translucent and tender, about 25 minutes.
  3. Place a wire rack over a baking sheet, and transfer grapefruit slices to the wire rack. Sprinkle with superfine sugar and let dry overnight. Once dry, cut slices in half.
  4. Line a baking sheet with parchment paper. In a small heatproof bowl, microwave chocolate in 30-second intervals until completely melted, stirring between each interval.
  5. Dip each candied grapefruit half in melted chocolate, leaving about half of grapefruit exposed. Placed dipped grapefruit on prepared pan. Garnish with sea salt, if desired. Let grapefruit sit at room temperature until chocolate sets, about 10 minutes. Store in an airtight container for up to 1 week.
