Almond Custard Tarts

Makes 12
Ingredients
- 1 1/4 cups all-purpose flour
- 1 cup slivered almonds, toasted
- 1/4 cup sugar
- 1/2 teaspoon salt
- 3/4 cup unsalted butter
- 2 to 3 tablespoons ice water
- Almond Custard (recipe follows)
- Sweetened whipped cream, fresh raspberries, fresh mint leaves
Instructions
- In the work bowl of a food processor, place flour, almonds, sugar, and salt. Pulse until almonds are finely ground. Add butter, and pulse until mixture is crumbly. With processor running, add water in a slow, steady stream until a ball begins to form.
- Spray 12 (3-inch) brioche molds with baking spray with flour. Divide almond mixture among prepared pans, pressing gently into bottom and up sides. Place pans on a large jelly-roll pan. Refrigerate for 20 minutes.
- Preheat oven to 400°. Bake until golden brown, about 20 minutes. Let cool in pans for 10 minutes. Remove from pans, and let cool completely on wire racks.
- Just before serving, divide Almond Custard among tart shells. Top with whipped cream, raspberries, and mint.

Ingredients
- 2 cups half-and-half
- 3/4 cup sugar
- 1/3 cup all-purpose flour
- 4 large eggs
- 2 tablespoons unsalted butter
- 1/2 teaspoon almond extract
Instructions
- In a medium saucepan, whisk together half-and-half, sugar, flour, and eggs until smooth. Cook over medium heat, stirring constantly, until thickened, about 10 minutes. Remove from heat; stir in butter and almond extract. Transfer to a medium bowl. Place a sheet of plastic wrap directly on surface of custard. Refrigerate for 30 minutes.
